With over 15 years of experience in prestigious establishments around the world, Caroline has built a unique expertise that combines operational excellence, strategic vision, and the ability to mobilize multidisciplinary teams.
Since the beginning of her career, Caroline has worked across five continents—Australia, Mexico, the United Arab Emirates, Europe, and Asia—immersing herself in diverse cultural and economic environments. This wealth of international experience enables her to understand the specificities of each market and offer tailored solutions for ambitious projects.
She began her journey in luxury hospitality in 2009, collaborating with globally renowned groups such as One & Only, Sofitel, and the legendary Plaza Athénée in Paris, where she mastered excellence standards and operational management.
In 2016, Caroline joined the Ducasse Paris group, working alongside the world’s most Michelin-starred chef, Alain Ducasse, to develop international gastronomic projects. After six years with the group, she took on the role of Director of Restaurants for the Lov Hotel Collection (Les Airelles), where she conceptualized and launched new restaurant concepts. She then contributed to the growth of the French group Les Domaines de Fontenille, overseeing the opening of three new properties and restructuring the entire restaurant offering of the group.
In 2024, Caroline founded Colette Advisory to bring her expertise and know-how to hospitality professionals. Her dual operational expertise in both hospitality and gastronomy, combined with a global strategic vision, allows her to efficiently coordinate various disciplines and specialties to unlock each project's full potential.
A polyglot, Caroline speaks five languages fluently—French, English, Italian, Spanish, and Portuguese—an invaluable asset for supporting clients in an international context. Her mission: to deliver innovative, personalized, and sustainable solutions to meet the challenges of an ever-evolving industry.
